Gelatin, a sticky substance derived from the bones, connective tissues, and skins of animals, undergoes a meticulous process to achieve its desired form. After calcium extraction, the remaining substance is soaked in cold water and heated to a specific temperature range. The resulting liquid is partially evaporated, defatted, and coagulated on glass plates before being poured into moulds. Once solidified, the gelatin blocks are sliced into thin layers and dried on wire netting.
Gelatin comes in various forms such as leaf gelatin, powders, granules, or flakes. Many bakers use leaf gelatin due to its consistent strength. A recommended usage ratio is 1%. It’s worth noting that, similar to other gelling agents, the gelling capacity of gelatin can be compromised by acidity.
